Use All Bran Cereal For Breading

Bread white fish or chicken breasts with All Bran.


Traditionally, the breading of fish and chicken involved rolling the fillet or breast into a mixture of flour, breadcrumbs and wet ingredients. More recently, chefs and health-conscious consumers have been choosing to replace the flour in breading with substances of a higher nutritional value. All Bran cereal has become a choice for some due to its complementary texture and high fiber content. Breading with All Bran replaces the flour completely, and depending on the recipe, can eliminate the bread crumbs as well. Add this to my Recipe Box.


Instructions


1. Measure the amount of All Bran cereal required for your recipe. To make four baked fish fillets you will require 1/2 cup of cereal and 1/4 cup of breadcrumbs. To make four baked chicken breasts, you will require 1 cup of cereal.


2. Prepare the cereal to be used in your recipe. For the fish fillets, place the cereal in a plastic bag and crush it with a mallet, or by pressing a large spoon on the outside of the bag with the heel of your hand. For the chicken breasts, create fine crumbs by running the cereal through a food processor.


3. Combine the cereal with the spices outlined in your recipe. To continue with the fish, cream 4 teaspoons of butter and add 1-2 tablespoons lemon zest, parsley and chopped black olives, along with a pinch of black pepper and 1/4 teaspoon red pepper flakes and 1 teaspoon of Italian seasoning. Mix the bread crumbs and All Bran into the spice mixture. For the chicken, mix 1-2 tablespoons Parmesan cheese and Italian parsley into the All Bran along with 1/4 teaspoon each of black pepper and garlic powder.


4. Bread or coat your fish or chicken and bake. Place the fish fillets in a greased baking dish and spread the All Bran mixture on top of each fillet. Cook for 12-15 minutes at 400 degrees Fahrenheit, or until the fish is cooked. Brush the chicken breasts with Dijon mustard and lay them in the All Bran mixture to coat. Place breasts on foil on a baking sheet and cook 25-30 minutes at 350 degrees Fahrenheit or until chicken is cooked through.
