Whether you're baking bread, pastries or pie, light spelt flour is an ideal choice if you have any sort of wheat allergy or aversion. Kamut Flour
As with spelt, kamut flour comes in both light and whole grain. Kamut has a somewhat buttery taste that makes it excellent as a substitute in your spelt bread recipe. It also contains digestible proteins that make it an excellent choice for anyone with wheat allergies.
Bajri Flour
If it's gluten you're trying to avoid, this flour is naturally gluten free. Made from millet seeds, bajri flour is ideal for muffins and other baked desserts, as it's slightly sweet and will create a nice crumble.
Amaranth Flour
Also gluten free, this flour is extremely versatile and can replace your light spelt flour in everything from pancakes to pasta. However, it is not ideal to use as a replacement for your spelt bread recipe as it tends not to rise well unless combined with another flour.
Lentil Flour
While creating sweet baked goods from a flour made from beans sounds odd, lentil flour is actually a commonly used gluten-free, wheat-free baking flour that is quite light and makes an ideal substitute for recipes that call for spelt.
White Rice Flour
If you're looking for a substitute for spelt that doesn't contribute a lot of flavor but is light in texture, white rice flour will do the trick. While it's not as rich in nutrients as the other options, including spelt, it is a wheat- and gluten-free flour.
