Does Peanut Butter Need Refrigeration?
Peanut butter, one of the staples of the average American family, has been around for more than a hundred years. Even before that, the Chinese used crushed peanuts in creamy sauces for additional nutrition and taste. Originally packed in barrels, peanut butter had a short shelf life, until 1922, when Joseph Rosefield developed the process of churning the peanuts like butter. This created a smoother consistency, prevented the oils from separating, and provided a shelf life for up to a year, as long as it was stored sealed and in a cool place. Add this to my Recipe Box.
Unopened Jar
Before opening, sealed jars of peanut butter do not need to be refrigerated. They can be kept in the pantry up until the expiration date stamped on the jar.
Opened Jar
After opening, store the peanut butter in a cool place to prevent it from going rancid. Extreme heat speeds the process of spoiling. After opening, natural peanut butter will keep for up to two months if refrigerated. After opening, processed peanut butter will keep for up to three months if refrigerated and two months on the pantry shelf.
"All Natural" vs. Processed
The difference between "all natural" and processed peanut butter determines the shelf life and whether it should be refrigerated. Without the added oil, sugar, and other preservatives, natural is a better option for the health conscious. For the convenience-minded, processed peanut butter is a better option.
Storing "All Natural" Peanut Butter
"All natural" peanut butter should be stored in the refrigerator after opening since it does not have any preservatives to prevent spoilage. Even refrigerated, oils may separate and need to be stirred back in before using. Let it sit out at room temperature for approximately fifteen to twenty minutes, then stir. Return to the refrigerator immediately. After opening, natural peanut butter will keep for up to two months if refrigerated.
Storing Processed Peanut Butter
Although processed peanut butter does not need to be refrigerated after opening, doing so will help to retain the best flavor. For smoother spreading, allow the peanut butter to come to room temperature before use. After opening, peanut butter will keep for up to three months if refrigerated and two months on the pantry shelf.
Freezing
Peanut butter should not be stored in the freezer because this changes the molecular structure. The consistency will change, and the oils will be more difficult to stir back in.
