Storing sweet corn is a great way to enjoy it during the winter or when it's out of season. You always should use the freshest corn you can find, and you can freeze it or dry it. Freeze Sweet Corn
1. Remove the husks and wash the ears.
2. Drop the ears into a pot of boiling water. Small ears (an 1 1/2 inch in diameter or smaller) should scald for six minutes, medium ears (up to 2 inches in diameter) for eight minutes and large ears (2 inches in diameter or greater) for 10 minutes.
3. Place the scalded corn immediately into ice water for the same amount of time.
4. Let them drain and dry.
5. Wrap each ear in moisture- and vapor-proof film, and then place them in plastic freezer bags, squeezing out as much air from the bags as you can.
6. Seal, label and put the bags into the freezer.
Dry Sweet Corn
7. Remove the husks and wash the ears.
8. Scald the ears in boiling water for two minutes, and then drain and pat dry.
9. Cut the kernels from the cob, and scatter them on a tray so they do not touch each other.
10. Let them dry in the sun for three days, bringing them inside at night to keep animals from eating them. Stir them occasionally, but don't let them touch. Kernels are dry when they are hard and shriveled.
11. Put the dried corn into an airtight container. You can store it indefinitely.
