More Americans are including vegetarian meals in their diet.


Sales of vegetarian foods increased around 25 percent between 2001 and 2003, according to Mintel International's "Vegetarian Foods 2003" report. One-third of the consumers interviewed by Mintel said they ate soy milk, meat substitutes, soy or tofu every month. Prepared Foods Network says these are the consumers who mainstream manufacturers, like Kraft, are targeting for sales. Food wholesalers typically buy large amounts of food at discounted prices, then sell it to retail stores. Sometimes, it's possible for individual consumers to buy foods at wholesale prices without going through an intermediary.
