Use Raw Coconut

Raw coconut meat has many uses.

Coconuts are very large nuts that are the fruit of coconut palm trees. While cracking a coconut and removing the meat is quite the task, the benefits of the fruit are vast; coconut meat is rich in electrolytes, potassium and iron. Raw coconut, which is frequently grated upon being removed from the shell, can be used in a variety of ways. Add this to my Recipe Box.

Instructions

1. Lay the coconut on its side on a cutting board; holding one end, chop the opposite end off with the a butcher knife. If the butcher knife does not go all the way through, rotate the coconut and chop it from the other side. The object is to form a flat surface at one end.

2. Stand the coconut up on the cutting board and chop the top in downward motions with the butcher knife. Keep chopping until you create an opening at the top of the coconut and can see the white meat. The coconut needs to be fully punctured in order to release the juice.

3. Invert the coconut over a drinking glass or large bowl and allow the juice to drain. If desired, save the juice for use in a smoothie or for baking.

4. Use the butcher knife to chop the coconut in half. Scoop the meat out using a serrated-tip spoon or use a heavy object, such as a hammer, to break the coconut meat into chunks. The meat can then be dislodged from the shell with a table knife.

5. Grate the raw coconut meat using a cheese or box grater, or use a food processor.

6. Use the raw coconut in a wide variety of dishes. Add shredded raw coconut to Thai and Indian curries and stews, or sprinkle it on top of desserts, such as ice cream, pies and cupcakes. You can also add raw coconut to salads or combine it with granola and dried fruit to make a snack mix.
