Bake Rice Bread

The primary ingredient in rice bread is rice flour, made from finely processed white rice. Rice bread is gluten-free, which makes it an excellent choice for diabetics or anyone with wheat allergies or celiac disease. Baking without gluten can be challenging; certain ingredients must be added in order to maintain the structure of the bread. A binder such as xanthan gum must be used to create a loaf of rice bread with good volume and an appealing texture. This recipe yields two 8-inch loaves, which will serve six to eight people. Instructions


1. Combine 1/2 cup warm water, 1 tbsp. honey and the dry yeast granules in a small mixing bowl. Set the bowl aside for about 15 minutes to allow the yeast time to activate.


2. Combine rice flour, tapioca flour, xanthan gum and kosher salt in a large mixing bowl. Combine the soy milk, melted butter, white vinegar, beaten eggs and remaining 3 1/2 tbsp. honey in a separate bowl.


3. Slowly add the wet ingredients to the dry ingredients, and then stir with a wooden spoon for 20 strokes. Add the yeast mixture and beat with an electric mixer on medium speed for 3 to 4 minutes. The resulting batter should be thin like cake batter rather than thick like normal bread dough.


4. Line two 8-inch loaf pans with wax paper and set aside. Divide the rice bread batter into two equal portions. Pour one portion into each loaf pan, then smooth the tops with the back of a wooden spoon or rubber spatula. Set the pans in a warm place to rise for about 1 hour.


5. Once the rice bread dough has risen, preheat the oven to 350 degrees F. Place the pans in the oven and bake for 20 to 25 minutes, or until golden brown. Insert a toothpick in the center of each loaf, and if it comes out clean, the rice bread is done.


6. Allow the bread to cool in the pans for 15 minutes, then transfer to cooling racks to finish. Slice into 2-inch pieces and serve immediately, or wrap in plastic and store at room temperature for up to three days before discarding any unused portion.
