Fry Chipotle Rice

Prepare fried chipotle rice to add a kick to your meal.


Once you've prepared your chipotle rice -- whether you've added a chipotle pepper or seasoning to basmati, jasmine or brown rice -- consider frying it to add a little heat and sear to the dish. Frying chipotle rice is a way to combine it with other ingredients, like vegetables, meat or spices. Use any pan with a wide, mouth and bottom to stir fry the rice, though using a wok would be best. Chipotle peppers are considered a medium heat chile pepper. Add this to my Recipe Box.


Instructions


Preparing Chipotle Rice


1. Pour the oil you're planning to use in the fry -- either peanut or vegetable oil -- to the saucepan and heat on high until water dripped into the oil sizzles immediately, about 2 minutes.


2. Reduce the heat to medium. Add in the minced garlic and stir it around until it's fragrant and browned. Add the rice. Turn the heat back to high and stir for 2 minutes.


3. Add the water and the bouillon to the saucepan. Let it come to a boil and continue boiling for 2 minutes.


4. Add the adobo sauce and the chipotle chile to the mixture. Stir well to blend. Cover with a lid and reduce the heat to low.


5. Let the rice simmer for 20 minutes. Fluff with fork.


Frying the Rice


6. Turn the burner to high. Place the wok on the burner and let it heat until it is almost smoking -- about 2 minutes, depending on your stove. Pour oil into the wok and add an egg, stirring it around to scramble. Remove the egg from the wok, wash the wok, return it to the stove and reheat the pan.


7. Drizzle cooking oil -- peanut or vegetable oil -- around the edges of the wok. Let it coat the surface of the wok in an even layer.


8. Add vegetables or meat to the pan and cook thoroughly.


9. Add the rice to the pan and stir it quickly to get it hot. Use your spoon to break up the clumps. Many people add soy sauce or other flavorings to the rice in the wok, but if the chipotle flavoring is enough, it isn't required.


10. Add the egg back to the rice and mix thoroughly.


11. Serve hot.
