Beans can be eaten raw, sprouted or cooked, and can be converted into flour, soy sauce and tofu. Beans are low in fat, and go well in stews, chilies, soups and rice dishes.
Peas
Peas come in three main types.
Peas are hollow-stemmed members of the legume family. Peas are grown in three types: green peas, snap peas and snow peas. Green peas are sweet in taste with a starchy texture and bear a resemblance to green beans. Snap peas have round pods and a sweet, grassy flavor. Snap peas are often used in Asian stir-fries. Snow peas are bright green, with flat pods and tiny seeds. Peas are versatile and can be eaten raw straight out of the garden. They also work well cooked and served in pastas, salads, soups, stir-fries and side dishes.
Lentils
Lentils are available in many color varieties.
Lentils are a type of legume related to beans and peas. Lentils come in several colors, including red, green, yellow, orange, brown and black. Lentils are sold whole or split, and with or without their skins. Dried lentils can be stored for up to a year in an airtight container. Lentils require cooking and should not be eaten raw. Unlike beans, lentils do not require soaking in water prior to cooking. Cooked lentils can be added to soups, stews, burgers and salads.

Peanuts are members of the legume family.
Peanuts belong to the legume family. Grown underground, the brown shell or pod of the peanut contains two or three peanut seeds. Peanuts are highly-caloric, yet rich in nutrients. Peanuts contain high amounts of fiber, protein, antioxidants, vitamins and minerals. Peanuts are a popular snack food commercially available in many forms, including roasted, raw, shelled, unshelled, salted, unsalted and flavored. Chopped peanuts can be added to many prepared food dishes to add flavor and texture.
