Collard greens are a vitamin-rich source of fiber, calcium and folate, providing a healthy addition to a meal. Steaming baby collard greens helps retain the nutrient value and allows you to cook the greens without the use of saturated fats, as found in butter, cream-based sauces and marinades. Instructions
1. Wash and drain baby collard greens in a colander to remove dirt, which if not removed, makes the consistency gritty. Cut the collard green leaves into ¼-inch to ½-inch long and wide slices.
2. Mince garlic and chop other vegetables, such as onions and peppers you want to steam with the baby collard greens, if desired.
3. Place your vegetable steamer basket into a large saucepan or wok. Pour water into the saucepan or wok so that it extends two inches up the side of the steamer without submerging your steamer.
4. Bring the water to a boil on high heat to create steam. Take the lid off the steamer and add your baby collard greens, garlic and vegetables.
5. Reduce the heat to medium. Replace the lid on top of the steamer and steam the ingredients for five minutes.
6. Remove the baby collard greens and vegetables. Toss them in lemon juice, olive oil, Parmesan cheese, salt and pepper for added flavor, if desired.
