They say that New York is home to the world's finest restaurants, and, as anyone who has eaten in the city can tell you, it very well could be true. At least part of this is due to the numerous high caliber culinary schools located in the city. With training from a New York City culinary institute on your resume, you will be able to work as a chef virtually anywhere.

The Institute of Culinary Education has a reputation dating back to over thirty years ago, when Peter Kump founded it. Today, the institute offers diplomas in Culinary Arts and Management, as well as Pastry and Baking Arts. It can take six to 11 months to complete one of these diploma programs, depending on your schedule. The instructional program is grounded in classical French techniques, although they also integrate ingredients and techniques from cultures as diverse as India, China, Italy and Spain. The Institute keeps its class sizes small---no more than 16 students---to ensure that each of their future chefs receives due attention. At the end of each lesson, students gather for a tasting and a critique of that day's work by the Chef-Instructor. All students must have either a high school diploma or a GED to be admitted. Financial aid and scholarships are available.

French Culinary Institute


Purveyors of fine dining cuisine all over Manhattan look towards the French Culinary Institute when recruiting chefs for their restaurants, which is certainly a testament to the school's reputation on the island. The institute offers career-oriented courses in Classic Culinary Arts, Classic Pastry Arts, Front of House Training and the Art of International Bread Baking; and advanced studies in the fields of Wine Studies, Culinary Technology, Food Journalism and Business Development; in short, everything an enterprising chef and/or restaurateur would require. The Institute's teaching philosophy is based on the method of Total Immersion, a hands-on approach that sees students complete their certification in just six months if they study by day, nine months by night.


The majority of students at the French Culinary Institute receive financial aid of some sort. The Institute offers numerous scholarships geared towards students from all walks of life. Note that all students applying for career-oriented courses at the French Culinary Institute will be required to present proof of high school graduation or the equivalent, such as a GED.

Italian Culinary Academy


The Italian Culinary Academy offers two rigorous culinary courses: Italian Culinary Experience and Essentials of Italian Cooking. The former course begins with 10 weeks of intensive training in New York City, where you learn not only about Italian cuisine, but also about the culture and speak the language. Then, you go to Italy for 18 weeks of further training, the first half of which are spent studying, the second half working in the kitchen of an Italian restaurant. Finally, you return to New York for your final exams.


The Essentials of Italian Cooking offers students the chance to learn make a variety of sauces, as well as a variety of traditional fish, chicken, beef and vegetable dishes. It is a less intensive course, centered on the New York campus, which consists of 40 hours spread over the course of 8 sessions.


The Italian Culinary Experience requires students to have high school diplomas or the equivalent, and to provide signed medical forms that they are free of tuberculosis and hepatitis A. The Essentials of Italian Cooking requires students to be at least 17 years of age. Financial aid and scholarships are available for both courses.
